The Milk Act, 1931 (Act No.59, 1931) , constituted the Milk Board and dissolved the Metropolitan Milk Board. (1)
Under the provisions of the Milk Act, which was assented to 7 December 1931(2) and commenced on 1 January 1932,(3) all milk produced within designated milk zones was vested in the Board. The Board determined the quantity and quality required, and paid producers according to the quotas allotted them.

After 1955, quotas for dairymen within the milk zones were determined annually by the quantity and quality of weekly supplies of milk received by the Milk Board during the previous twelve month period.

The functions of the Board were when required to inspect premises for the storage, production and distribution of milk within the specified areas, and withdraw registrations or prosecute under the Milk Act, as well as the Pure Foods Act. Appeals against the Board's decisions were heard in Courts of Petty Sessions. The Board was also empowered to publicise and promote the industry and publish reports on its activities.

The Dairy Industry Authority Act No.29, 1970 assented to 8 April 1970, (4) repealed the Milk Act and the Dairies Supervision Act of 1901and constituted the Dairy Industry Authority of New South Wales, which commenced 1 July 1970. (5)
