FTIR spectroscopy data of sound, germinated, and frost damaged wheat flour. Wheat grain samples supplied by Australian Grain Technologies (AGT). Measurements taken using an Agilent Technologies Cary 630 ATR-FTIR analyser. A background calibration was performed before each measurement.
